Cheese Cake-Cheap Skate

We all know that tasty (and sinful) food is always loaded with calories. Cheese cake shares the same philosophy too. I think cheese cake is a popular cake much preferred by the ladies. Yes, absolutely scrumptious but you may be start calculating how many laps you have to run to shake off the calories before you even take the first bite. Some may give a long deep thought to decide to eat that small tiny slice of cheese cake, which I observe, they would eventually they would just give in and dig in.
This week recipe has to be the most simple cheese cake recipe out there. Basically, this very same recipe can be adapted with other ingredients like strawberry and any other funky combo you can think of to give it a twist! Like I always say, cooking is all about creativity right?
In this recipe I used passion fruit puree. Actually, I would prefer to use fresh passion fruits, but I couldn’t find any. So, for those who have fresh fruits (especially the seasonal ones) at your disposal; do use them instead of the processed ones. The thing with cheese cake is that its sweetness has to be balanced (not too sweet) carefully to tantalize your tastes bud well.
Many cheese cake recipes are baked but this is a cold set where no cooking required. I know some may not have ovens at home, so, to oven-less people, this is for you!
Mango & Passion fruit cheese cake
Difficulty: Beginner
Servings 8
4 fresh passion fruits, remove flesh or 80ml passion fruit puree (unsweetened)
80gm or 1/3 cup sugar
10gm or 3 tsp gelatine powder
150gm whipping cream
480gm cream cheese, the best one is Philadelphia brand if you can find
1 pack or 16 digestive biscuits… Jacobs’s oatmeal
2tbls butter , melted
1 mango, flesh removed
1 orange, juiced
Method:
Step1,
Place biscuits in food processor and blended until breadcrumb-like pieces. Next, add in the melted butter. The mix will become binding.
Use a tart case or any other mould you wish, line first with cling film. Then, add in the biscuit mixture and pat firm inside to form the cheese cake base. Make sure even all around.
Step 2,
Place cream cheese in a bowl and add some sugar. Next, remove flesh from mango and remove pulp from passion fruits & squeeze the orange, place in blender and blend for around 30 seconds. Be careful not to blend too much or the seeds from the passion fruit may break.
Add this to the cream cheese.
Soak gelatine in COLD water. In the mean time, bring cream to the boil, subsequently add in gelatine. After gelatine dissolved in the hot cream, add this to your cream cheese and whish until smooth.
Place mixture in the tart case, and set in fridge until set around 2 -3 hours.
Take out and carefully lift out the cling film with the cheese cake, place it on a chopping board and slice cake with a hot knife.

is there anything that can be substituted with passionfruit? dont think it is easy to find.
and where do i get gelatine powder?

Hi shingy,
There are many substitutes for passionfruit that you can choose.
Try to use the shaper flavour fruits and not the sweet ones.
Can use fresh strawberries, or any other berrys.. Try a citrus like, lemons or limes,. Or Pineapple, white chocolate, even some strong coffee flavour is nice too.

ps.. you can find gelatine at most supermarkets, I got mine at cold storage in the baking section.
