Finger Foods – Secret Recipes

Great finger foods which are quick and easy – takes under 10 minutes to prepare:-
- Celery with chunky peanut butter – use fresh cut 1 inch long celery stems with curved pockets and smother with dollop of chunky peanut butter inside the curve – tanginess of celery is offset by sweet creamy peanut butter.
- Smoked salmon on cream cheese with pimentos ( can be found in small bottles in supermarket shelves). Smoked salmon taste best –Mash smoked salmon with cream cheese (with fork) and lots of freshly ground black pepper and chopped up pimentos. A bit of grated lemon zest gives it some zing but it’d optional. Spread mixture on lightly buttered crackers or mini toast/French bread

Always remember if you have a cracker or bread based item, it is a good idea to have a thin layer of butter or margarine spread at the bottom as ‘waterproof lining’ e.g. for chopped tomatoes are placed on top – will take longer to get soggy.
When you are expecting largish but not-sure-how-many turning up crowd – dip combos are the best finger food items. Good combinations include :-
- Crackers / dips
- Bread sticks / dips
- Mini toasts/dips
- Veggie sticks/dips – most healthy alternative
